For the Onion Bombs
4 large sweet onions
1 tablespoon olive oil
Salt and black pepper, to taste
For the Cheeseburger Filling
1 pound ground beef
1 small onion, finely diced
2 cloves garlic, minced
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
½ cup cooked bacon, chopped
1 cup shredded cheddar cheese
For the Mac and Cheese
2 cups cooked elbow macaroni
1 tablespoon butter
½ cup milk
1½ cups shredded cheddar cheese
Salt and black pepper, to taste
Toppings
Extra shredded cheddar cheese
Chopped cooked bacon
Diced tomatoes
Diced onions
Chopped parsley or green onions
Instructions
Step 1: Prepare the onions
Preheat your oven to 375°F (190°C).
Peel the large onions and carefully cut off the tops. Remove the center layers to create a hollow space, leaving enough onion around the outside so the onion stays intact.
Brush the outside of the onions with olive oil and season lightly with salt and pepper.
Step 2: Cook the cheeseburger filling
Heat a skillet over medium heat. Add the ground beef and cook until browned.
Add the diced onion and garlic. Cook for a few minutes until softened.
Season with salt, black pepper, garlic powder, onion powder, and smoked paprika.
Stir in the chopped bacon and remove from the heat.
