🥒 Cheesy Chicken Stuffed Zucchini Boats
Ingredients
4 medium zucchini
2 cups cooked shredded chicken
1 cup black beans, drained and rinsed
1 cup corn, drained
1 cup diced tomatoes
1 cup shredded cheddar cheese
½ cup shredded mozzarella cheese
½ cup salsa
1 tsp chili powder
1 tsp paprika
½ tsp garlic powder
½ tsp cumin
Salt and black pepper, to taste
2 tbsp chopped fresh cilantro
Optional: ¼ cup diced onion or jalapeño
Instructions
Preheat the oven to 375°F (190°C).
Prepare the zucchini: Cut each zucchini in half lengthwise. Use a spoon to scoop out some of the center, leaving enough zucchini around the edges to form a sturdy boat.
Make the filling: In a large bowl, combine the shredded chicken, black beans, corn, tomatoes, salsa, chili powder, paprika, garlic powder, cumin, salt, and pepper.
Fill the zucchini: Place the zucchini boats in a greased baking dish and spoon the chicken mixture into each one.
Add cheese: Sprinkle the cheddar and mozzarella evenly over the stuffed zucchini.
Bake for 20–25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
Garnish with fresh cilantro and serve warm.
